understood very little of my French lesson last night I figured I should do some extra work!
They're insanely easy to make.
You need:
1 cup plain flour
1 teaspoon sugar
1 teaspoon cinnamon
2 teaspoons baking powder
1 cup milk (I used buttermilk as we had some left in the fridge, but normal milk works just fine)
1 tablespoon sunflower oil
1 tablespoon water
2 tablespoons melted butter
So all you need to do is mix the wet ingredients together then whisk in the dry ingredients. If you can leave it to rest for a while that's great, if not then it's fine to use straight away.
Warm a frying pan (or one of those wonderful old-fashioned cast iron griddle pans) and melt butter into it. I never said they were healthy pancakes!
Now you don't want the pan to be too hot else the pancakes will brown too quickly and not cook through. So a medium heat.
When the pan's ready pour a good dollop into the pan and smooth it into what ever shape you fancy, you want the pancake to be about the thickness of two pound coins stacked on top of each other. The pancakes will start to get holes in the top of them when they're ready to be flipped over. Basically when the top of the pancake looks like a crumpet it's ready to be flipped.
Cook on the other side until brown and repeat the process until the batter's used up. My batter made about 7 big pancakes which I smothered in more butter and maple syrup. Yum!
